Fruit elicitation as a natural method of increasing fruit color and flavor

The elicitation service consists in teasing fresh fruit in a dedicated elicitation chamber. Fresh fruits placed in the elicitation chamber in small boxes are irritated by a compilation of chemical and physical factors. Physical factors include: ultraviolet, air humidity and air pressure.

Elicitation involves two stages. In the first stage, the fruit is irritated with a compilation of phicisal factors for up to 60 minutes, depending on the content of base polyphenols in the fruit. The first stage of the process takes place in an elicitation chamber set up in an open room. In the second stage of the elicitation process, the fruit is stored in a cooling chamber for 24 hours at a temperature of 5C.

After this period of fruit storage in the cooling chamber, we measure the increase in the content of polyphenols in the fruit. Then, fresh fruit can be processed into juices, dried, extracts or deep-freezing. Decomposers after the elicitation process are oxygen and water vapour. The fruit is not subject to ionizing irradiation. The fruits can be pressed, washed, died, boiled and extracted.

A juice producer has implemented technologies to improve the color of blueberry juices. Our company provides blueberry fruit elicitation technology. The same supplier still delivers the fruit. We provide the service of elicitation of fresh fruit after harvesting, when they are in boxes on pallets, before starting the technological process at the juice producer.

Our service is provided with our mobile equipment, which we bring to the client. We fold the equpipmnt and connect it to 230V electricity. We do not use other materials and gases from the outside for the process. After activating the elicitation chamber, insert the fruit pallets into the chamber. Our device initiates biochemical processes in the fruits that increase the amount of anthocyanins and polyphenols.

The process is very efficient, because in one day one chamber can prepare 50 tons of fruits for the production of juices for the next day.
